Who doesn’t love pancakes?! They can be seen as an unhealthy breakfast, brunch or dessert but the great news is they don’t have to be! The main reason they are unhealthy is the toppings people put on them. It normally consists of a lot of sugar. There are lots of healthy options when it comes to pancakes and in my mind they are a lot tastier too. These pancakes are super simple to make and delicious.

Ingredients
40g wholemeal flour
1 banana
1 egg
1 heaped tsp cacao powder
4 tbsp milk (cows, almond etc)
Pinch of baking powder
Method
Whisk egg and mash banana. Measure out flour in a bowl, add baking powder, cacao powder, egg and banana and mix.
Slowly add the milk and mix.
Heat a small amount of coconut oil in a frying pan over a medium heat. Add the mixture using a ladle into the frying pan to make the desired size pancake. Once cooked on one side flip to the other. Roughly 2 minutes each side.
I serve mine with fruit, some nut butter and a couple of squares of high quality dark chocolate. Enjoy!
