This takes 10 minutes maximum to make (not taking into account the 10 minutes of marinating) so is a great go to when you have little time or you have got home late from work. It means that you don’t have to reach for a potentially unhealthy “easy” meal as this is easy and healthy! Winner, winner salmon dinner!

Ingredients
1 tsp coconut oil
150g dried noodles
Pack of stir fry veg for two of your choice
50g spinach
2 salmon fillets (if you don’t like fish chicken works well)
Marinade
1 tbsp soy sauce
1 tbsp sweet chilli sauce
1 tsp five spice
Sauce
2 tbsp soy sauce
1 tbsp sweet chilli sauce
½ fresh red chilli
2 cm piece of ginger grated
Method
Cut the salmon into small wedges and coat in the mixed marinade ingredients. Leave for 10 minutes.
Cook the noodles based on packet instructions.
Put the coconut oil in a wok or large frying pan. Place the salmon pieces in the pan for 2-3 minutes until they are almost cooked then take off the heat and place on a plate.
Mix together the ingredients for the sauce.
In the same pan throw in the stir fry vegetables and spinach. After about 2 mins add the stir fry sauce.
Once the vegetables are almost cooked (but still crunchy) add the salmon and cooked noodles for a further 1-2 minutes. Take off the heat and serve immediately. Enjoy!
