This is another one of my guilt-free desserts. The ingredients list may surprise you…beans in a dessert but go with it and see what you think. For me it satisfies my sweet tooth but without any refined sugar and it’s also gluten free if you use the buckwheat flour but you can use normal flour but try and go for wholewheat. The beans add some protein which is a bonus!
Ingredients
Can of black beans
6 dates
2 tbsp maple syrup
75ml almond milk
25g buckwheat flour/wholewheat flour
2 tbsp cacao powder
1 tsp vanilla paste
A good handful of dark chocolate chips
Method
Rinse the black beans in cold water. Add all ingredients apart from chocolate chips to a high speed food processor and whizz up. You may have to scrape down the sides to get all the ingredients combined. Stir through the dark chocolate chips. I eat on it’s own or with some yogurt and fresh fruit. Enjoy!
