So this is my go to breakfast, I absolutely love it! You can have it just with milk or with yogurt or a bit of both. I often have it with almond or soya milk too. I also add some fresh fruit to get some vitamins in first thing in the morning. The oats are a slow release energy source and with all the nuts and seeds you have protein for repair and rebuild and good fats to also provide energy. The candied ginger does contain quite a bit of sugar but per serving there won’t be much at all and ginger has so many benefits such as anti-inflammatory properties, soothing upset stomachs and has also been found to inhibit the growth of certain cancer cells! But if you do want to avoid the sugar just use ground ginger or its great without any ginger.

Ingredients
400g Rolled oats
80g Almonds
50g Pecans
50g Hazelnuts
60g Mixed seeds
20g Candied ginger or 2tsp ground ginger
3 tbsp coconut oil
7 tbsp maple syrup or honey
Mixed raisins and sultanas
Method
Mix together all ingredients apart from raisins and sultanas ensuring the coconut oil is in liquid form.
Bake for 45-50 mins at 160 degrees fan or until lightly toasted and golden. Mix in the raisins and sultanas. Enjoy!
